I've been making cheeses ranging from ricotta to Romano, paneer to Parmesan for several years. I'm thrilled with my to-die-for hard cheeses, but the near-instant gratification of making soft cheese puts them higher on my list of cheeses I routinely make. And, regardless how many times I make the soft cheeses presented in this book, I'm amazed at how a process so simple can yield something so delicious. When I first started making cheese, I was frustrated at the poor explanations in many "beginners" cheese making books. I ended up reading through many books on cheese making to really understand why certain steps were crucial. With Simply Soft Cheese, I wanted to give cheese makers the guidance they needed so they could make the best cheese possible. I worked for years in science before discovering my true passion in writing.
